Zheng Shan Xiao Zhong is often Romanized as Lapsang Souchong. It was probably the first black tea ever commercially produced. Originating in Fujian Province’s Tong Mu Village in the Wu Yi Shan area, this tea style is processed in a 3–4 story smoking shed called a qinglou. At the bottom of a qinglou is a wood oven where horsetail pine is burned, producing smoke throughout the levels of the shed. The tea leaves are withered on the top levels, oxidized on the middle levels and dried on the bottom levels. The finished tea is strip shaped and solid black with a characteristic smoky aroma.
